is it illegal for an employee to trash company files when they quit their job? And is there an action you can take against it?

Yes it is illegal. You could sue them for trespass to chattels (property damage) in either small claims court (if you want to do it yourself), or you could hire an attorney and sue them in district court. Gather all the witnesses and evidence you can before making your case so you are prepared for the hearing.
