I have performed additional services as a contractor in a contract that were verbally requested by the project manager of a company who hired me. They will not pay for those extra services. What do I need to do to collect from them?

Sue them under the theories of an oral contract and also under the theory of quantum meruit. I would also place a mechanic's lien if you are still within your state's time limitations for the filing of such a lien.
