How do you file a defense by respondent in civil court?

We are trying to close out a small, part-time LLC in Iowa (photography business) but we can't because we were sued by a client who's contract we cancelled. We went to small claims initially and presented our defense and won against her. Now, she's really upset due to that and appealed to civil court. This whole matter is over something less than $300.00. We were going to just write her off for initial non-payment, as we sent her to collections but couldn't collect.

Our business is registered in Iowa, but she took us to Nebraska (Sarpy County) Court, where she lives. It's now out of small claims due to the appeal from her and sent to civil court. We don't want to fly out from Oregon (where we JUST moved to) to defend ourselves, since we feel it's a cut and dried contract issue. We simply can't afford to do that right now. Can we defend and respond by mail and not have to physically appear on the court date? If so, how do we do this and what do we write up?

Business in Mills County (Malvern), Iowa / Court in Sarpy County (Papillion), Nebraska, we now live in Clackamas County (Lake Oswego), Oregon, we just moved here and cannot afford to have a lawyer represent us over a $300 matter, we need to self-defend again but can't be there due to distance, work, cost, etc. on a cut/dried contract matter. We've done internet research and tried free legal clinics, they don't know how to do this.
